chuck : it is the only way preserve lemon juice. Water portion is evaporated. Now a days even in Nepal we may not find Chuk. If you want black chick get 5-6 bottle of lemon juice and boil it until water portion is evaporated. You sounded like asking to buy mangoes and looking for Maldah mango. Use whatever best substitute available.

I remember the process of making chuck when I was young. Brought it to Madhesh too. If you use lime, lemon or ugly fruit ( jyaamir ) it will be sour.
